Happy National Popcorn day!! I couldn’t resist a delicious recipe today, and this sweet, simple and low calorie cinnamon brown sugar popcorn recipe is perfect for celebrating!
I’ll just come out and say it… my family is into sweets. Like way into them. Okay, I won’t throw them under the bus any longer… so am I. For the most part, if I have a choice between sweet and savory or sweet and spicy, I’ll go with sweet every time. We’ve been making some choices lately though to take better care of ourselves, and that began with a sugar detox at the beginning of the year. Yes, that’s exactly what it sounds like, cutting out sugar (and we did coffee too!) for the past three weeks.
Now, I will say that this recipe isn’t a NON sugar recipe, but compared to my first thought of literally coating the popcorn in sugar, butter and just about anything sticky I could get my hands on, it’s a huge improvement. And you want to know what else? It’s relatively low-calorie and my family LOVED it! It is SO good.
Thankfully it’s also really easy to make too, so that I can whip up some more at any time. The next time I’m feeling the need for a sweet tooth fix, I know this is one that I don’t have to feel too guilty about, and it totally hits the spot. It’s a little bit sweet, a little bit salty, deliciously crunchy and won’t sabotage a diet!
You need about 4 cups of air-popped popcorn and can use any you’ve got on hand… pop it in the microwave, cook it on the stove or a pre-made variety. This one was super simple to make for me, because I had a few bags of Skinny Pop on hand that they sent me for National Popcorn Day, so literally opening a bag was my first step! Then it was just a light sprinkle of salt and slowly drizzling a mixture of melted butter, cinnamon and brown sugar on top! I like to use a big wooden spoon to mix it all in and try to get all the kernels covered. The result was a bowl of popcorn that was devoured in less than ten minutes. Good thing we’re a family of five and it wasn’t just me eating it all. You’ll feel like you’re indulging in a big, sweet treat but without the guilty side effects that usually come along with it. Pretty great right?!
