So, I know that it’s October and I’m loving the beginning of fall with warm soups, breads and all kinds of pumpkin things. And yet, when we decided to have people over for a casual dinner tonight, this is what came to mind.
Because, well, it’s just that good.
I’m a burger lover, and when it’s done right, it’s actually one of my favorite meals! And since it is fall, and thankfully Florida is just beginning to get the memo on that, I’ll be back to regularly seasonal scheduled meals. Like different chilis, pastas and soups.
But for now, I’m going to enjoy every bit of juicy goodness from this delicious burger… which I think is actually made juicier because of the tomatoes in the patty instead of on it. I’m not a fan of eating tomatoes raw, but when cooked into the bones of a meal, that I can handle, and better yet, that I like.
Caribbean Bleu Burger
(Makes 4 servings)
//Ingredients:
1 pound ground beef
1 (14.5 ounce) can Red Gold petite dices tomatoes with lime juice and cilantro, drained
1 egg, beaten
1/4 cup bread crumbs
salt and black pepper to taste
1 pineapple, cored and sliced
1 avocado
crumbled bleu cheese for topping
4 ciabatta rolls
3 tablespoons olive oil
//Process
Combine ground beef, tomatoes, egg and bread crumbs in a bowl. Form into patties and season with sea salt and black pepper. Grill to desired temperature.
As the patties are grilling slice the ciabatta rolls in half and brush with olive oil. Add ciabatta rolls and sliced pineapple to the grill. Flip to lightly cook both sides.
Stack cooked burger patties with grilled pineapple slice, sliced avocado and bleu cheese crumbles on grilled ciabatta bun and serve warm.
