Relish trays are a great intro to any dinner, whether it’s a family affair or a larger gathering with guests. Take it up a notch with a modern twist and create your own simple dip with a variety of colorful vegetables and interesting crackers.
I recently hosted a fun and Lustrous Holiday Event (more details and photos coming soon!) at with Krayl Funch of An Appealing Plan and she demonstrated how to make this amazing Creamy Tofu + Lemon Herb Dip for us all, and of course, we noshed on trays full of delicious and colorful veggies like organic multicolored carrots, fresh sliced fennel, pickled radishes and interesting crackers along with this fresh dip.
Usually if you’re creating a relish tray, you’re probably also balancing a few other items for a meal, and so keeping it light, fresh and easy for you to make is always a good thing! Luckily for us, this recipe calls for just a few ingredients (and although I wasn’t sure about the tofu to be honest, the resulting flavor and texture really was creamy, smooth and delicious!), and it’s so simple to whip up quickly.
- 1-14 ounce package of tofu, firm
- ½ cup mayonnaise
- 1 garlic clove, skinned, minced
- 1 tablespoon olive oil
- 1 tablespoon fresh Thyme, chopped
- Zest of 1 lemon
- Juice of 1 lemon
- 1 teaspoon salt
- Fresh ground pepper
- Place all ingredients in a food processor. Process until smooth.
- Taste and adjust seasonings as needed.
- If possible, cover and refrigerate the dip for at least an hour to let the flavors combine.
- Serve on a modern relish tray!
