It’s like the rhythm of our home actually changes according to the season’s big symphony. We crave the foods that seem to warm the heart right along with warming our bellies. I love a good pot of something hot simmering on the stove, the scents of something sweet baking in the oven. And yet, I’m drawn to the cuddles on the couch under a cozy blanket and tickle fights on our fluffiest of rugs. It’s a tension, and just like music tension, it’s the anticipation that builds before the relaxation or release. It’s a push and pull.
Sometimes the big pot of something warm on the stove and something sweet baking in the oven wins and I spend my afternoon chopping, sipping, stirring, mixing… many times with little hands in the mix and little feet pitter-pattering through the middle. And sometimes it’s the cuddles, and tickles and story times; or even the errands and schedules that win. And in those times, I rely on companies that I trust to whip up something simple in the kitchen, our own little sweet blend.
Allowing for help, and perhaps even asking for it, is what brings the kind of atmosphere that can allow for stories to be passed around the dinner table with the mashed potatoes and conversation to spark with the sweet stuff. It acquiesces to a drink in hand rather than hitting the timer once again while simultaneously trying to sop up the bubbling over that happened on the stove.
Help can come in the form of a robot cleaning the floors for me and a speaker that sets a timer to my voice command (thank-you-very-much, technology). Help can be in the way my husband has learned what I’m thinking in that last hour before guests arrive and will light candles before I even ask. And sometimes help comes in the form of stretching out the mixing time just a little longer for little hands to take their turn stirring, and taste-testing of course.
Long before the holidays we keep our fridge stocked with those signature red containers of Horizon Organic. And in this season where we seem to be busier than ever, it’s no different. Horizon is something I know I can reach for, and when I do I’m not adding weird ingredients or strange additions to our food, just real, wholesome goodness.
No matter what I’m making, from main dishes to sides to the sweet stuff, my goal is sticking to simple, recognizable ingredients, and this white chocolate peppermint mousse is made with just three!
- 1 1/2 cups Horizon Organic heavy whipping cream, divided in half
- 12 ounces white chocolate chips
- 1/4 teaspoon peppermint extract
- Garnish: whipped cream and crushed peppermint candies
- Heat 3/4 cup cream over medium heat until hot but not boiling.
- Remove from heat, and add chocolate, stirring until melted.
- Stir in peppermint extract; cool completely.
- Beat remaining 3/4 cup cream until firm peaks form.
- Fold cooled chocolate mixture gently into whipped cream mixture.
- Spoon mousse into cups or glasses; garnish, if desired.
- Chill until ready to serve and enjoy!
