… keeps my sweet tooth at bay
This is perfect for those times you’ve got a few apples left in your fridge after you bought a slew of them at the market, and you’re tired of actually just eating apples, but don’t want them to go to waste, and they only have a couple days of shelf life left. (Was that too specific?) OR, you just want some because it’s delicious.
I recently made this for our new Annual Day Before Easter Brunch and Egg Hunt (needs a better name doesn’t it?) and people loved it. My brother put it on his belgian waffles, some just ate it with whipped cream, and I like it with a scoop of vanilla ice cream (cinnamon would be good too) and a drizzle of caramel sauce…. though that’s long gone by now. Oh, and you can just eat it by itself too, that’s ok.
I like to cook this in my crockpot. It’s the easy way out. I can throw it in and forget about it, until my kitchen smells like heaven, then that’s all I can think about. Who likes an overachiever anyway?

Fresh Mommy’s Baked Apple Recipe:
6 apples, preferably Granny Smith, but whatever you’ve got lying around will do
1 cup sugar
1/2 cup packed brown sugar
1 tablespoon cinnamon
1/8 teaspoon nutmeg
3 tablespoons cornstarch
4 tablespoons butter
Peel apples and slice them. Put all ingredients, except butter, into crock pot; stir well, coating all apple slices, and place pats of butter on top.
Cook on HIGH for 1-1/2 or LOW 3-1/2 hours, stirring once half way through.
Serve with ice cream, whipped cream or caramel sauce if you’re feeling racey.

we just had some of this at a “colonial inn” resturant at disney…preceeded by sliced meats, mac&cheese and mashed pots…it was a rainy day too…what a perfectly comforting meal it was!…this brought back that memory, thanks! blessings…
