I had a beautiful salad today, fresh crisp field greens with a delicious blanket of cucumber, egg, pecans, bacon and chicken, and yesterday a plate of greens and dried cranberries topped with red onion, cucumber and citrus vinaigrette satisfied my palate. I could go on, but I’ll just suffice it to say that this preggo mama has been craving green. Maybe it’s just that the color of these cravings is perfectly timed with St. Patty’s Day, but I think it has more to do with the coming of spring… and the little bunny growing inside me.
