I’d like to start with a quote from my husband:
“This is almost as good as a chicken wing.”
Now, if you know him, you know he rarely ate vegetables until the last few years, so this is epic. And it’s about cauliflower. Yep, you read that right, cauliflower. This statement is proof that you should try this recipe immediately! I’m not actually a huge fan of buffalo sauce and I still think this recipe is super good!
This was a great side dish for our burgers last night, but it would also make a yummy appetizer. I really loved how crispy they came out and they had just the right amount of flavor!
Ingredients
1 head of cauliflower
For the batter
1/2 cup all purpose flour
1/2 cup water
dash of wing sauce
1/4 teaspoon garlic salt
1/4 teaspoon dried onion
For the buffalo sauce
1/4 cup wing sauce
3 Tablespoons butter, melted
pinch of salt
Directions
Preheat the oven to 450 degrees.
Line a baking sheet with tin foil and spray with non-stick spray.
Wash your head of cauliflower and cut into pieces. I found that I liked the smaller pieces better.
In a medium bowl, mix together the batter ingredients. It will be fairly thick.
Dip each piece of cauliflower into the batter until fully and evenly coated. Place onto the prepared baking sheet in a single layer.
Bake for about 15 minutes until the batter just hardens.
In a small bowl, mix together the buffalo sauce ingredients.
Once the cauliflower are done, remove from the oven and brush with the buffalo sauce. Again, fully and evenly coat each piece.
Put back into the oven and bake for 5 more minutes, until the sauce has mostly dried and the cauliflower is crispy.
Remove from the oven, let cool, and enjoy! I served ours with a side of buffalo sauce (for those who wanted them spicier!) and a side of ranch dressing (for me!). So tasty!
Do you have any go-to veggie recipes that hit the spot?

oh my….they do look so tasty and would be a great side to burgers.
I love zucchini sticks! most restaurants deep fry them, but you can bake them too.
get your egg white, some bread crumbs, parmesan/romano blend of cheese, garlic powder, salt/pepper to taste…. and a Ziploc bag for those dry ingredients. dip in your egg white (I beat mine for a bit) and then into the bag to get covered in yummy coating. then onto a sprayed cooking sheet (I use stoneware) and into the 425 oven for about 20-25 minutes.
I use marina and ranch sauce for dipping.
so good!
