Summer has officially begun and I would like to officially celebrate with POPSICLES! Summer creamsicles, to be exact, all kinds of creamy, pastel fun. It’s also officially HOT here in Florida, (100 degrees for the win) and there’s nothing like a refreshing creamy treat… especially on a stick! We’ve teamed up with Horizon Organic to create some super easy, fun and delicious (FOUR of them!) summer creamsicle recipes, plus we’ve got some gorgeous watercolor backgrounds to download and give a little treat to your tech devices or printable for your summer party or home decor!
So let’s get this summer creamsicle party started shall we?!
Growing up I remember orangesicles as one of my mama’s favorite treats, and it was the quintessential summer popsicle in our freezer. Outfitted with all kinds of helping hands in our kitchen (always!), we decided to make our own and fill our freezer with some of that quintessential summer goodness, and then add a few more fruity and flavorful variations! Since I always do have such a plethora of helpers, I needed something simple to whip up and fun to make! You guys, these creamsicles are good, and they totally hit the spot in so many ways. The kids love them, they are easy to make, the colors are just pretty to look at (okay maybe not the banana one so much, I would SO add yellow food coloring next time or change it to pineapple instead of banana, but hey, that’s what I had on hand!), and the flavors are great!
My little sous chefs got to work washing, prepping and cutting the fruit, pouring, mixing, blending. Really, you can just pick your favorite fruits and get to work making your own fun summer creamsicle pops!

Strawberry Summer Creamsicle
1 1/2 cups strawberries
1 1/2 cups Horizon Organic milk (or milk of your choice… coconut, etc.)
2 tablespoons sweetener + 1 tablespoon for sprinkling
1 teaspoon vanilla extract
Red/pink food coloring (optional)
Wash and chop strawberries and sprinkle with sweetener. Combine ingredients in a blender. Mix until smooth. Add desired amount of food coloring, if needed. Pour into popsicle molds and gently tap on the counter to remove any bubbles.
Kiwi-Lime Summer Creamsicle
1 1/2 cups kiwi
3/4 cup freshly squeezed lime juice (not from concentrate)
1 cup Horizon Organic milk (or milk of your choice… coconut, etc.)
2 tablespoons sweetener + 1 tablespoon for sprinkling
1 teaspoon vanilla extract
Green food coloring (optional)
Peel and chop kiwi and sprinkle with sweetener. Combine ingredients in a blender. Mix until smooth. Add desired amount of food coloring, if needed. Pour into popsicle molds and gently tap on the counter to remove any bubbles.
Banana Summer Creamsicle
2 ripe bananas
1 1/2 cups Horizon Organic milk (or milk of your choice… coconut, etc.)
3 tablespoons sweetener
2 teaspoons vanilla extract
Yellow food coloring (optional)
Peel and break bananas into smaller chunks. Combine ingredients in a blender. Mix until smooth. Add desired amount of food coloring, if needed. Pour into popsicle molds and gently tap on the counter to remove any bubbles.
Orange Summer Creamsicle
1 1/2 cups orange juice
1 1/2 cups Horizon Organic milk (or milk of your choice… coconut, etc.)
2 tablespoons sweetener
2 teaspoons vanilla extract
Orange food coloring (optional)
Combine ingredients in a blender and mix until smooth or whisk all ingredients together in a bowl. Add desired amount of food coloring, if needed. Pour into popsicle molds and gently tap on the counter to remove any bubbles.
As a plus, and just because we like to have a little extra fun in the kitchen, we crushed up some toppings and made ourselves a little “topping bar” for the popsicles. Some dried coconut flakes, fun kids’ cereals and crushed up Horizon Organic Grahams make for the perfect summer creamsicle toppings! If you decide to crush up graham crackers or cookies, just stir in a little honey to the mixture and spoon on top.
