It’s my birthday! Okay, well, it’s my birthday month. Actually, it’s my birthday week. Around here though, we celebrate for AS LONG as possible.
And this time? I celebrated with OREO® Ice Cream Cake topped with a Triple Berry Compote. You guys, the combination was pretty incredible.
I’ll back up and give you the full story for just a minute. I used to make an OREO Raspberry Cheesecake, and it was uber popular with our circle… meaning friends would request it for get-togethers, family loved it for holidays and no matter what kind of gathering or celebration, everyone devoured it.
Once we made the big move from Michigan to Florida and began creating a new circle, I stopped making it. The reason it’s been years since I’ve even looked at the recipe again? It took so long from start to finish. Overall it was a fairly simple recipe, but boy was it time consuming. And with a growing family, that’s time I haven’t had. Though the taste profile and flavors have never left my mind.
Onto our love for Ice Cream Cakes, well, that all started with my husband and his love for ice cream in general. But ice cream in cake form is a whole different level and something that brings all of the nostalgic memories, like birthdays back when we used to celebrate with piñatas and parties (as adults we just kind of grow out of that), baseball season wrap parties and more. In fact, he’s the one who introduced me to delicious layers of ice cream eaten in cake form.
For some reason, my good-ole, never fail recipe has been swirling in my mind, but this time, we mixed the flavors we loved… OREO and berries, with the convenience and simplicity of picking up an Ice Cream Cake during a grocery run.
In fact, I picked up this OREO® Ice Cream Cake for my little family birthday party in the Bakery (freezer) at Walmart; they come in all kinds of flavors, btw, including original Carvel®, OREO is just one of my first loves (use this product locator to find a store near you – https://iloveicecreamcakes.com/product-locator/).
The verdict; my family DEVOURED it. And by that I mean plates were licked clean!
While delicious on its own with vanilla ice cream blended with OREO cookie pieces and whipped icing topped with a large OREO cookie wafer, adding in the home-made portion of a triple berry compote is a great way to “sauce-up” the OREO cake and make a statement. A great blend of rich and creamy, with a slightly tart berry topping. For me, it’s also a new party-friendly, gather-ready dessert that won’t take me hours to make!
From family celebrations to special events and just everyday deliciousness (yep, we totally made this to celebrate my birthday AND the completion of the floors in our new homeschool room… coming to a #FreshMommyHousetoHome episode soon!), there’s always a sweet reason to take a break for cake.
This berry compote recipe is actually a great topping for anything from pancakes to biscuits, waffles to cinnamon fries, over oatmeal or gelato… and of course cake!
Triple Berry Compote recipe:
- 1 cup raspberries
- 1 cup blueberries
- 1 cup blackberries
- 1 tbsp honey
- 1 tsp flour
To make the triple berry compote, mix the berries and honey together in a small saucepan. Heat over medium heat, while stirring 2-3 minutes. The heat will start to soften the berries into a liquid. Add the flour and stir for another minute.
Kids can help with: washing the berries, measuring the berries, pouring in the honey.
Note: you can use fresh or frozen berries, whatever you have on hand!
