This past week I had such a fun time on set with the hosts of Daytime TV, and the segment airs today! It had been awhile since I’ve been on, and it was good to see my friends Jerry and Cyndi again. Really though, the star of the whole thing is this Healthy Apple and Pomegranate Winter Salad Recipe, and I thought I’d share it with you here today.

But back to this winter salad recipe. Sometimes it’s difficult to think of salad for winter. We crave wholesome comfort foods as the temperatures are low. But our bodies still search out and seek fresh nutrients and eventually we’re drawn to the crispy crunch of fresh foods.
I love adding in a great salad as a starter for our winter meals, and this winter salad recipe? It’s sweet without being too sweet, and totally up my flavor alley! Make it a full meal by tossing in some protein, or maybe some nuts, add a side of bread or soup if you want some warmth, and you’re good to go!
Another plus? With four kids I ALWAYS want simple while still being nutritious and delicious! The dressing for this winter salad recipe is just THREE ingredients, while the salad itself is just a few as well. Totally simple and still totally delicious!
For this Healthy Apple and Pomegranate Winter Salad recipe and for the segment, I worked with Pazazz apples, which was my first time working with them… and now? It’s one of my family’s favorite apples! A descendant of the Honey Crisp, Pazazz apples have that sweetly tart crunch.
PS. Here’s a really easy way (from Martha Stewart of course) to seed a pomegranate!
- 1 Pazazz Apple
- 4 Cups Romaine Lettuce (chopped)
- 2 Cups Red Cabbage (chopped)
- 1/2 C Pomegranate Seeds
- 2 Tbsp Red Wine Vinegar
- 6 Tbsp Olive Oil
- 1 Tbsp Honey
- Feta Cheese
- Chicken Breast
- Almonds
- Red Pepper
- Mix salad ingredients in a bowl.
- Whisk together dressing in a separate bowl. Toss over the salad.
- Top with feta cheese (optional) or other toppings and enjoy this winter salad recipe!
