I think Virginia summed that up pretty well. I know I’m at my best when I eat well, and well friends, if you have a chance this week, this is an easy make that adds a little sweetness into your fridge, and then a little sweetness to your biscuits, and toast, and sammies, and chicken, and so many things!
My favorite snack is to get a little french loaf from the bakery, then slice and toast it before topping with goat cheese and slathering with the apricot butter. SO good.
Ready? Okay, so after a recent trip to the market in which we practically cleared them out of all of their apricots, we decided that a few (six or seven) of our jars would be better used if they were filled with the deliciously smooth filling of apricot butter instead of being stored on a shelf.
After washing, we just sliced the apricots and removed the pits before tossing in the blender (you can use a blender or food processor), and once smooth we poured into the crockpot.
For our eight pounds of apricots, we added two cups sugar, two tablespoons cinnamon and a little clove and stirred it all together in the crockpot. Then just it let cook for about 8-10 hours while the house filled with the most delicious scent. And by the most delicious scent, I mean the house smelled like cinnamon rolls and apple pie, seriously… after smelling that all day, just having butter was almost a let down. But the flavor is so good.
While it was still hot, we filled our jars with the steaming apricot butter and let them sit upside down on a towel to seal. Pretty easy peasy and oh so yum.
Really, folks, if you have a chance to make some this week, get on it. Because I don’t really want to share mine.
