We are halfway through #SmoresWeek, which is kind of a bummer, because it’s going so quickly and I want to see (and eat) so much more! On the upside, I have a decadent cookie recipe for you to perk up your mid-week blues!
They are gooey, graham crackery goodness with some melty chocolate thrown in. Mmmmm! The only downfall is that they need to be refrigerated overnight before baking. I would tell you to skip this step and just go with it, but I tried. And the marshmallows pretty much disintegrated when baking. However, attempt #2, with an overnight refrigeration step solved that issue, so don’t skip it!
I promise they are worth the wait.
And if anyone is home, they won’t last 20 minutes. Mine barely lasted 2 hours and I was the only one home for one of them!
- 2 1/2 cups all purpose flour
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 6 - 7 sheets of honey graham crackers, roughly chopped
- 1 cup butter, room temperature
- 3/4 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2/3 cup semi-sweet chocolate chips
- 1/2 cup roughly chopped Hershey Bars
- 2 cups large marshmallows
- Mix together flour, salt, baking soda and baking powder. Set aside.
- Cream the butter and sugar together until fluffy.
- Slowly add the eggs one at a time, then the vanilla.
- Slowly add the flour mixture until just incorporated.
- Fold in the graham crackers and chocolate chips.
- Take a tablespoon of the cookie and create a small indentation.
- Stuff 1-2 large marshmallows into the indentation (I cut mine in half to make it easier). Top with another 2/3 tablespoon of cookie dough and press together until the dough completely covers the marshmallows. Repeat with the remaining dough and marshmallows.
- Place the cookies on a baking sheet and cover. Chill in the refrigerator overnight, up to three days.
- Preheat the oven to 350 degrees.
- Uncover the cookies and bake for 8 - 9 minutes or until a light golden brown.
- Use a spatula to immediately remove the cookies to cool on a wire rack.
- Store in an airtight containter and enjoy within 24 hours.

Looks yummy!! I am curious about when you say large marshmallows, do you mean the standard put in hot chocolate size or size of marshmallows you roast over a camp fire w/ sticks? In the photos it looks like the smaller size, so I wanted to make sure. 🙂

I used the large campfire size, but you could easily do it with 3-4 of the small hot chocolate size!
