Sweet, delicious and crunchy granola exploding with flavors. Ditch store-bought… healthy homemade granola is easy!
I have a confession to make; I’m not great at meal planning. Sometimes I’ll plan out the week’s meals (and by that I usually mean just dinner), sometimes I just decide on a meal or two and then we have a few staples around and we scrounge up the rest. It’s something I’m working on this year. Although what I really like to do in the kitchen? Cook to cravings. I know this isn’t the best way to go about it because there are so many times that I don’t have what I need, but when something sounds so good and you can act on it, it’s just the best. One of the things I was craving the other day was granola, it just sounded so good. It’s also something that my kids absolutely love to eat; with almond milk and berries, with yogurt, as a dry snack, make a trail mix, etc. But here are a few things about granola, the store-bought boxes of the stuff are expensive and most are full of added sugars, and also, it’s SO easy to make! I like to focus on the whole, natural things I can put in a mix of granola myself and not all the words on a bag of it that I can’t pronounce. Plus, we’ve been on a bit of a coffee, soda and sugar fast over hear since the start of the year, so making it myself is always the best option. So on a recent cold morning, make a big batch of it is just what I did. You only need a few ingredients to make granola yourself, and most you probably already have in your pantry or cupboard! For dry ingredients you need oats and then whatever mix-ins you’d like (nuts, chopped dried fruit, coconut, salt and spices), and for the wet ingredients use a fat (coconut oil or melted butter), a sweet (honey, maple syrup, agave, brown sugar, etc) and some extra flavor (vanilla or almond extract). Of course, you can go crazy from here and add in all kinds of things, but this is a great basis to start from!
- 4 cups oats
- 1 cup raw nuts
- 1/2 cup chopped dried fruit (I used cranberries)
- 1 cup coconut flakes
- 1 pinch salt
- 1 pinch cinnamon
- 1/4 cup coconut oil
- 1/4 cup honey
- 1 1/2 tsp vanilla
- Preheat oven to 350 degrees and line a baking sheet with parchment paper.
- Using a large bowl, combine all dry ingredients. In a small bowl combine wet ingredients and whisk together. Pour wet ingredients over dry ingredients and mix until coated.
- Spread out on prepared pan and bake in preheated oven for 30 minutes, stirring at least once while baking.
- Allow granola to cool completely - the air will help the granola obtain a crunchy texture.
