There’s nothing like sharing a good meal over good conversation, so today I’m sharing a delicious Shrimp and Chicken White Queso Rice Dinner Recipe with you while we partner up with Knorr® to talk about #ShareAMeal for World Food Day!
There are some moments that change you.
Even just this week I brought up a few of these life-changing and still-vivid memories over dinner with friends, sharing and exchanging stories, reminiscing about the times throughout my younger years that helped to mold me and my worldview. Days of passing out food and clothing in mountain villages in Central and South America. Helping to set up dental clinics for those without any kind of dental care, teaching little ones what a toothbrush is and how to use it. Some of the highlights of my childhood and young adult life are from the orphanages and schools in Honduras where my team would build buildings, move rocks, paint walls… anything that was needed to make the world those children lived in a better place, and then share our heart and love over tortillas and beans. And then other times, when the lines and throngs of people needing clothing and shoes in small villages in Peru would become too much, bodies pressing in on us, we’d raise our hands and others in the bed of the truck would pull us up to keep us safe from being trampled. I remember the feelings as our pickup moved forward, showering remaining clothing over the people. Feelings of gratefulness that I could be a part of helping and empowering the life of someone else. Feelings of sadness that they needed so much, that we couldn’t do more.
These are a few of those moments, those memories that have stayed with me. It’s part of the reason I want my children to know what it’s like to give what we have to help others. Life is so much more than our little bubble. When we’re able to give into the world around us, it brings an entirely new perspective of the life outside our four walls. It makes our thinking larger while at the same time making the big world around us small enough to see it in a more beautiful and tangible way.
From the smallest of things like opening a door for someone, smiling at our grocer, taking a meal to a sick friend, volunteering in the community or flying overseas with a team of doctors and dentists, there are ways we can help to change and affect the world we live in. That’s why I was excited to learn that for this World Food Day (October 16th, 2016), Knorr® and the World Food Program will provide a million nutritious meals to children around the world, with Knorr U.S. donating $20,000 to Feeding America, the equivalent of 220,000 meals. I love to teach my kids generosity in life and one of the great ways we enjoy that is to share a meal of our own! Sometimes we’ll pack up extra snack bags to have in the car for those times we pass others asking for food or help. Our family serves meals and basic items to the homeless and needy in our community regularly. One of our favorite ways to share a meal is when someone we know is sick, or needing extra rest (like after the birth of a baby!).We like to cook a double portion of dinner together and deliver it to them in a special way. This time we created mini floral bouquet bundles and special hand-written notes along with dinner for a dear friend in home recovery.
Besides empowering my kids in the kitchen, I’m also exposing them to a more generous lifestyle. It gets their thinking off of “what I need now,” and reminds them of the joy that comes with sharing what we have. Plus, isn’t it amazing how much kids love to be creative in blessing others?! They have so much fun writing notes and cards, decorating presents, putting gifts together… why not foster that in them while they’re young so they don’t lose that zest for giving!
Want our Shrimp and Chicken White Queso Rice Dinner Recipe?! It’s so simple to whip up, and wow did my kiddos eat it up (our portion that is, we delivered our friend’s portion before we ate theirs up!).
Shrimp and Chicken White Queso Rice Dinner
Ingredients
- 4 Packages Knorr White Cheddar Queso Rice
- 1 C milk
- 3 C water
- 4 Tbsp butter
- 1 lb frozen shrimp (cooked)
- 1 lb chicken
- 1 sweet bell pepper (chopped)
- 1 small bunch fresh cilantro (chopped)
- 1 lime
- 2 avocado
- 1 tsp minced garlic
- seasoning to taste
- olive oil for cooking
Instructions
- In a skillet or pot, heat olive oil over medium heat and add chicken and garlic. Season to taste and cook thoroughly until no pink remains. Set aside.
- In same skillet, cook frozen shrimp in olive oil and chopped bell pepper over medium heat. Usually about 2 minutes per side or until pink. Set aside.
- Cook all four packages of Knorr White Cheddar Queso Rice per directions on back.
- Add in chicken, shrimp and bell pepper. Stir in the juice of one lime and chopped cilantro.
- If dividing for two families or servings, this is a good time.
- When you're ready to serve, add the fresh chopped avocado to the top and some extra chopped cilantro.
