As soon as the temperatures begin to drop, soups and chilis begin to fill our meal planner. Okay, before temperatures here in Florida drop. It’s fall, and even though it might not quite feel like it here yet, this easy and simple slow cooker white chicken chili is a family favorite!

We started adding in one secret ingredient recently that takes the flavor up a notch and I can’t get enough! But the other plus? I mentioned it before, this slow cooker white chicken chili is SO easy. And by easy I mean dump everything into your crockpot, turn it on and walk away. No pre-cooking, no pre-mixing. No pre-thawing. It’s seriously one of the easiest recipes we make.
Ready to get started on this slow cooker white chicken chili? Who doesn’t love a quick, easy and delicious meal? I know I do!!

Season the chicken breast and place the chicken in the slow cooker (if frozen, add to slow cooker and then add seasonings on top). Add in drained and rinsed beans, corn, green chilis, chicken stock. Cook on low for 6-8 hours or high for 2-3 hours.

- Sliced avocado
- Lime
- Fresh cilantro
- Cheddar cheese or cotija cheese
- Sour cream or non-fat Greek yogurt
- Crackers
- Fritos
- Corn bread

Slow Cooker White Chicken Chili Recipe
Ingredients
- 1-2 pounds chicken
- 2 cans white northern beans (rinsed and drained)
- 1 can diced tomatoes with green chilies
- 4 cups broth
- 2 cloves garlic
- 1 tsp cumin
- 1/2 tsp cayenne
- 1/2 tsp oregano
- 2 tsp masa (corn flour)
Instructions
Add all ingredients to the slow cooker and let cook 4-6 hours or until chicken is cooked through.
Remove chicken from slow cooker and shred or cut chicken (you can pull it apart with two forks or put in a mixer and let it shred the chicken for you). Once shredded, stir back into the chili.
Add cilantro and serve with toppings of choice!
