It’s officially soup season, friends! And I couldn’t think of a better way to kick off our soup season series than with a soup version of one of the most-loved dinners on the internet, this is Marry Me Chicken Soup.
If you’ve had the original Marry Me Chicken, you know exactly why it earned that name. Creamy, garlicky, sun-dried tomato goodness that’s downright swoon-worthy. This time we’re turning it into a cozy, one-pot soup with tender chicken, veggies, and just enough pasta to make it feel like a full, hearty meal in a bowl. 🍲

Marry Me Chicken Soup Ingredients
- 1 teaspoon olive oil
- 1–1½ pounds boneless, skinless chicken breasts or thighs, diced into 1-inch pieces
- 2 teaspoons Italian seasoning, divided
- Salt and pepper, to taste
- ½ cup diced carrots
- ½ cup diced celery
- ½ cup diced onions
- ¼ cup diced sun-dried tomatoes
- 3 garlic cloves, minced
- ¼ cup flour
- 2 tablespoons tomato paste (optional)
- 6–8 cups chicken broth (start with 6 cups)
- 6 oz pasta (small shells work great)
- 1 cup heavy whipping cream
- ½–1 cup grated Parmesan Reggiano cheese
- 2½–3 cups fresh spinach

Directions
- Heat the olive oil in a large soup pot or Dutch oven over medium-high heat. Add the chicken along with 1 teaspoon of Italian seasoning and salt and pepper to taste. Cook until browned on all sides, about 4–5 minutes.
- In the same pot, add the onions, carrots, celery, sun-dried tomatoes, and garlic. Cook until the vegetables are translucent, about 3–4 minutes.
- Sprinkle the flour over everything and stir well to combine, adding it in stages so it doesn’t clump. If you’re using tomato paste, stir it in now too.

- Slowly whisk in the chicken broth, stirring to work out any lumps and scraping up anything stuck to the bottom of the pot.
- Bring everything to a rolling boil, then add the pasta along with the remaining teaspoon of Italian seasoning and more salt and pepper to taste. Cover, reduce the heat to low, and let it simmer for about 20 minutes, until the chicken is cooked through and the pasta is al dente. (You can also cook the pasta separately and stir it in at the end.)
- Uncover the pot and stir in the heavy cream, spinach, and Parmesan. Let it simmer for another 5 minutes so everything comes together.
- Taste and adjust the seasoning with salt and spices as needed.

Tips for the Best Marry Me Chicken Soup
- Broth amount: Starting with 6 cups of broth gives you a thicker, creamier soup. Prefer it a little thinner? Add more broth later, it’s much easier to thin a soup out than to thicken it back up.
- Pasta timing: If you’re planning to have leftovers, cook the pasta separately and add it to each bowl individually. This keeps it from soaking up too much broth and going soft in the fridge.
- Make it your own: Swap the spinach for kale, or add a pinch of red pepper flakes if you like a little heat.
