These strawberries have a hint of ginger candies and I love a good dollop of vanilla greek yogurt on my pancake stack as well. SO GOOD and slightly addicting, too. Oh, and don’t forget that drizzle of pure maple syrup on top.
In our house, we’re a fan of pancake days. Maybe it’s partially the fact that the name pancake has the word “cake” in it or the delicious and truly versatile flavor options, but pancake days always feel like a celebration!

- 1/4 C honey
- 1 tsp ginger, grated
- 1 cup strawberries, sliced
To make the gingered strawberries, bring 1/4 C honey and a dash of freshly grated ginger to a simmer in a small saucepan. Let cool slightly and toss with 1 cup of fresh, sliced strawberries.
