Flipping pancakes one at a time for my big family? No thank you. I love them, but I also love finding solutions that require less of me. Enter these delicious and easy Pumpkin Sheet Pan Pancakes, they bake all at once in the oven, so breakfast is ready in about 20 minutes and everyone eats at the same time. To me that is a major win!
Our family absolutely loves these. They’re soft, fluffy, and full of cozy pumpkin spice flavor. Top them with cinnamon butter and a drizzle of syrup, and oh boy are they SO good.
As an added bonus: because they freeze well they are a perfect option for meal prep, too!

- No standing at the stove. One pan, one bake, breakfast for everyone. Yes, please!
- Starts with pancake mix. Don’t get me wrong I love making things from scratch, but it’s also nice to find these simple time saving recipes. With the addition of just few simple add-ins, it turns these pancakes into one of our absolute fall favorites.
- Great for busy mornings. I love to make a batch ahead and we will reheat them all week.
- Freezer friendly. Stash squares in the freezer for up to 3 months.
How to Make Pumpkin Sheet Pan Pancakes
- Preheat the oven to 425°F and spray a sheet pan with cooking spray.
- Mix the dry ingredients. In a large bowl, stir together the pancake mix, brown sugar, and pumpkin pie spice.
- Mix the wet ingredients. In a separate bowl, whisk the pumpkin purée, milk, and buttermilk.
- Combine. Pour the wet ingredients into the dry and stir just until combined. A few lumps are fine.
- Spread and bake. Spread the batter evenly on the sheet pan and bake for 14 to 16 minutes, until golden and springy to the touch.
- Cut and serve. Let cool slightly, cut into squares, and top with cinnamon butter and syrup.
Tips + Storage
- No buttermilk? Make your own: stir 1 tablespoon of vinegar or lemon juice into 1 cup of milk and let it sit for 5 minutes.
- Don’t overmix. Stirring just until combined keeps the pancakes fluffy.
- Easy cinnamon butter. Stir ground cinnamon and a little brown sugar into softened butter.
- Fridge:Â Store cooled squares in an airtight container for up to 3 days.
- Freezer:Â Freeze squares in a single layer, then transfer to a freezer bag for up to 3 months.
- To reheat:Â Warm in the microwave or toaster oven until heated through.
