While in Los Angeles recently, and browsing a convenience store way to late one night before turning in to my hotel room, I spotted it… cold and calling my name. It was mu first eggnog of the season. Upon my return home, and subsequent trip to the grocery store to fill my emptied pantry and refrigerator, it was time for my second. Into my cart went a carton of Pumpkin Spice Eggnog, because I like all the fun and festive flavors of the season and didn’t feel like making the effort of doing it myself.
One morning, I decided to whip up some eggnog waffles for my family before tackling a long list of Christmas to-do’s (because I was traveling all of November and arrived home in the first week of December, I had some serious Christmas catching up to do!) and eggnog is always a good start to a Christmas-filled day! I used the pumpkin spice eggnog that we had in the fridge, but any eggnog will do. The flavor is smooth and creamy, without being too overpowering – and would make a great addition to any Christmas morning breakfast or brunch!
The icing on the not-so-cakey cake was the delicious nutmeg syrup. Now if you’re not a huge nutmeg fan, just cut back a little on the amount you add in… I was a little generous with the sprinkling, but with nutmeg, a little goes a long way in taste. And if you’re not into eggnog, this syrup would be delicious over gingerbread waffles as well!
Eggnog Waffles with Nutmeg Syrup
(Makes one 4 waffles)
//Ingredients:
For the waffles:
1 1/2 cups flour
1 tablespoon baking powder
1 teaspoon salt
3/4 teaspoon cinnamon
2 large eggs
1 1/2 cups eggnog
6 tablespoons melted butter, slightly cooled
1 tablespoon rum, optional
For the syrup:
1 cup sugar
2 tablespoons all-purpose flour
1 teaspoon cinnamon
1/3 teaspoon nutmeg
2 cups cold water
2 tablespoons butter
1 teaspoon vanilla extract
1/4 teaspoon rum extract, optional

For the waffles:
In a medium bowl, mix together the dry ingredients. In a large bowl, mix together the eggs, eggnog, butter and rum. Slowly add in the dry ingredients and mix just until combined. Pour onto hot, greased waffle iron.
For the syrup:
In a saucepan, combine the sugar, flour, cinnamon, nutmeg and water. Bring to a boil, then cook and stir for two minutes or until thickened. Remove from heat and stir in butter, vanilla and run extract. Serve with warm waffles and butter.
