While I don’t always make lists of resolutions for a new year, I’m all about creating actionable goals. And this coming year? One goal is being more present with my little ones. And that means enjoying more conversation ’round the table. Even if it’s trying to differentiate the made up stories compared to the actual happenings in my three year old’s life or playing referee between four kids wanting to talk at the same time.
My aim for our dinners are simple, recognizable ingredients in everything we whip up in the kitchen, yet I don’t want to spend so much time at the stove that I can’t enjoy our dinner table together. Our farmhouse table to be exact. It’s become the center of our family life. And I want to keep the bustle around it, which is why between making delectable treats I like using uncomplicated options like Horizon organic macaroni and cheese mixes and classic bites I know my family likes, sometimes just meshing it together in different ways. Take the baked potato for example… Opened up like a bowl, topped with a creamy party of protein mac and cheese, and a few added options like BBQ chicken, chili or bacon (perfect for a leftovers night!), I can get dinner on the table in no time.
