We’ve made it to the final pick of soup season, and we’re closing things out with a fan favorite: Creamy Tortellini Soup. I’m not saying this will fix your day… but it might fix dinner. It’s rich, cozy, loaded with sausage and cheese-stuffed tortellini, and comes together in one pot. So that means easy clean up.

This one has quickly become a go-to in our house, and I think it’s going to become one in yours too. 🧡

Creamy Tortellini Soup Ingredients
- 1 tablespoon olive oil
- 6–7 Italian sausage links (casings removed), or 1 pound ground Italian sausage
- 1 large white onion, chopped
- 4 tablespoons chopped garlic
- Salt and pepper, to taste
- 1 teaspoon dried oregano
- ½ cup flour
- 32 oz carton chicken stock
- 20 oz package cheese-stuffed tortellini
- 2–3 cups fresh spinach
- 1 cup heavy cream

Directions
- Drizzle the olive oil into the bottom of a large pot over medium heat. Add the sausage and cook, breaking it up as it browns, until fully cooked through.
- Add the chopped onion to the pot with the sausage and cook until softened.
- Stir in the chopped garlic along with a couple of generous pinches of salt, ground pepper, and the oregano.
- Sprinkle in the flour a little at a time, stirring between additions, until the sausage and onions are evenly coated.
- Pour in the chicken stock, stirring well to combine and work out any lumps from the flour.
- Add the tortellini and fresh spinach, and let simmer until the tortellini is cooked through and the spinach has wilted.
- Stir in the heavy cream and let the soup warm through before serving.

Tips for the Best Tortellini Soup
- Sausage choice: Mild or spicy Italian sausage both work great here, pick whichever your family prefers.
- Fresh vs. frozen tortellini: Fresh, refrigerated tortellini cooks the fastest, but frozen works too. Just add a few extra minutes of simmer time.
- Make it your own: Swap the spinach for kale, or add a handful of grated Parmesan on top for even more flavor.
