A parfait-style treat with a twist! Sweet, delicious, and crunchy granola cups exploding with flavor to hold all the goodies of a delicious parfait treat. Make these yogurt filled granola cups topped with fruit for breakfast, snacks or even serve as a dessert!
My oldest is a huge fan of the parfait. Okay, we all enjoy it, but my daughter Aliyah if given the option will choose it over just about anything else. Clearly, my youngest is following along in her big sister’s footsteps and didn’t even want to wait for me to finish before diving in herself! While it’s always an easy option to throw some granola and fruit on yogurt, I thought it would be a fun twist to mix it up a little and create a “cup” out of the granola. The great part is that these can be made ahead of time and stored for a few days! You can easily switch up the flavors and add in some extra punches of nutrition (like chia, flax, wheat germ, etc), and that’s something I love about it! It’s a snack that’s protein-packed and you can mix and match the ingredients to fit your family’s tastes and preferences.
Once the yogurt hits the granola, it will eventually soften, so assemble these delicious yogurt cups when you’re ready to indulge! Simply top with your favorite yogurt, we happen to be fans of Horizon Organic vanilla yogurt around here, and add in your toppings. This is where things can get really fun!
A few topping ideas for your Yogurt Filled Granola Cups:
- banana
- kiwi
- berries (strawberry, raspberry, blueberry, blackberry)
- mango
- goji berries
- chocolate drizzle
- peanut butter drizzle
- honey
- Horizon Organic grahams
- coconut flakes
- chia seeds
- flax seeds
- Horizon Organic fruit snacks
- 2 1/4 C oats
- 1/3 C coconut flakes
- 2 Tbsp flaxseeds
- 1/4 C butter
- 1/4 C dark brown sugar
- 2 Tbsp honey or maple syrup
- 1/4 Tsp cinnamon
- 1/2 Tsp vanilla
- 1 C Horizon Organic vanilla yogurt
- Toppings as desired
- In a large bowl, combine oats, coconut and flaxseeds.
- In a small saucepan, combine butter, brown sugar, honey and cinnamon. Cook and stir until sugar is dissolved.
- Remove saucepan from heat and stir in vanilla.
- Combine wet ingredients into dry ingredients, and stir to coat.
- Chill until cool.
- Preheat oven to 325 degrees and lightly grease 12 muffin cups.
- Using moist hands (to help prevent sticking), press prepared mixture into the bottoms and up the sides of each muffin cup.
- Baked 15 minutes or until edges are golden brown.
- Cool in muffin pan on a wire rack.
- Gently remove granola cups from muffin pan.
- To serve, spoon yogurt into granola cups and top with fruit!
