Espresso or No Espresso
If you’re looking for a coffee drink that will help you stay awake and alert during the holiday season, look no further than this recipe for the perfect cookie butter latte. This caffeinated pick-me-up is made by combining espresso shots with milk, cookie butter, and a few simple toppings.
BUT, what if you don’t have an espresso machine?
There are a few ways to still make this cookie butter latte happen! First, you could use instant espresso, and just mix it with hot water to create your espresso shots. Alternatively, I’ve made quite a few latte recipes with a strong pour of coffee! Even the new Keurig machines have a strong button as well as shot options!
So, just make a strong cup of coffee and try it that way… still caffeinated and STILL absolutely delicious!

Heat Milk
In order to make the perfect cookie butter latte, you will need milk, about two tablespoons of cookie butter, and a shot of espresso (or the coffee options we mentioned above).
For this one, while I do have a coffee frother that also heats the milk, I wanted to cookie butter to be blended in as part of the milk, which means heating and frothing separately.
You could use heavy cream, whole milk, or any other dairy alternative – basically your milk of choice! Heat the milk in the microwave, or on the stove, for about one minute, and then whisk in the cookie butter and a pinch of sea salt (for the ultimate balance of flavor!) until it is fully combined.
What is Cookie Butter?
Cookie butter is a spread made from ground-up speculoos cookies, milk or butter, and other ingredients. It’s popular in Europe for spreading on bread or toast, but it’s totally caught on in the U.S., too! It can be found in many grocery stores during the holidays as well as specialty food shops and even Trader Joe’s sells their own version of this tasty spread!
If you want to give your latte an extra kick of flavor, try adding some cookie butter!
Its sweet, slightly spiced flavor is perfect for the holiday season.
I have to be totally transparent here – the last time I picked up cookie butter, I accidentally grabbed crunchy instead of creamy. I ALMOST didn’t make this recipe until I picked up a new jar, but decided to go for it anyway… and I have to say, the crunchy version also works if that’s what you have!
Perhaps the most surprising thing about the simple but tasty little biscuit known as speculoos is the amount of disagreement about the origin of its name. The Dutch hold that speculaas biscuits originated in the Netherlands in the 17th century, a time when spices brought to Europe by the Dutch East India Company were becoming more widely available. Spices that made their appearance at that time included ones that were often used in the speculoos recipe such as cinnamon, cloves, mace and ginger.
Credit for the creation of speculoos, as they are known in Belgium (speculos in France), is generally given to a Belgian patissier from Flanders called Antonie (or Antoine) Deplée. In 1870, Mr Deplée registered the recipe for speculoos in Hasselt and production of the biscuits has remained essentially Belgian ever since.
