The Simple Ingredients for Lasagna Soup
You could choose one kind of meat, instead of mixing both Italian sausage and ground beef, but LOVE the flavor profile by using the two! It just gives that extra oomph. For me, crockpot cooking means there is a little leeway in ingredients. For example, use whatever tomato products you have on hand! Sometimes the consistency will change slightly, but as long as you have enough fluid, you’re golden. Below is a list of what we put in our slow cooker lasagna soup.
- 1 pound Italian sausage
- 1 pound ground beef
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 carton (32 ounces) broth
- 2 cans (15 oz) tomato sauce
- 2 cans (15 oz) crushed tomatoes
- 1 tbsp Italian seasoning
- 1 tbsp dried basil
- 1 box lasagna noodles, broken into 1-inch pieces
- 2 cups coarsely chopped fresh spinach
- 1 cup cubed or shredded part-skim mozzarella cheese
- Thinly sliced fresh basil, optional
Slow Cooker Lasagna Soup Preparation
While it might seem like there’s not a lot of preparation involved, it is really SO much less that a traditional lasagna and it totally pays off!
The biggest prep involved is browning your meat ahead of time. And if you happen to use an instant pot as your slow cooker (it DOES work that way) or another crockpot that you can cook meat in first, then you don’t even need that extra pan. Otherwise, just brown the meat along with your onion and garlic… everything else gets tossed in the slow cooker!
Before Serving your Lasagna Soup
It’s gonna be hot! Let your lasagna soup sit for about 10 minutes before serving once you mix in the spinach to allow all flavors to blend together. Enjoy with a side of sliced French or garlic bread and extra Parmesan cheese.

It’s all about those toppings, baby!
Mozzarella cheese, parmesan cheese, sliced basil, even a spoonful of cottage or ricotta cheese is delicious on your Lasagna Soup.
And those sides too. Serve with a crusty piece of bread to sop up those delicious juices. Garlic bread is a great choice as well. And salad always makes for a perfect side. Italian or Ceasar salads are our favorites to serve with Lasagna Soup.
Leftovers are awesome heated up and even drizzled with a little balsamic vinegar. Oh, and did I mention that it freezes well? Score!
SLOW COOKER LASAGNA SOUP Prep Tips
The easiest way for me to make lasagna soup is with a slow cooker because I mostly can set it and forget it and come home to a ready-made meal. We recommend using a 6-quart slow cooker for best results, but if you have a smaller or larger one, just adjust accordingly. You’ll want to spray it lightly with nonstick cooking spray before adding ingredients. This will help prevent things from sticking.
You can also cook it up in one pot instead of a slow cooker! Once your meat is browned, add in the other ingredients and let cook until noodles are ready. SUPER simple and easy too!

Easy and Delicious Slow Cooker Lasagna Soup
Ingredients
- 1 pound Italian sausage
- 1 pound ground beef
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 carton (32 ounces) broth
- 2 cans (15 oz) tomato sauce
- 2 cans (15 oz) crushed tomatoes
- 1 tbsp Italian seasoning
- 1 tbsp dried basil
- 1 box lasagna noodles, broken into 1-inch pieces
- 2 cups coarsely chopped fresh spinach
- 1 cup cubed or shredded part-skim mozzarella cheese
- Thinly sliced fresh basil, optional
Instructions
- Brown the Italian sausage and ground beef in a large skillet over medium heat and drain off the excess grease.
- Stir in diced onions and garlic and cook for 2 more minutes.
Then place the meat mixture, crushed tomatoes and tomato sauce, and broth in the slow cooker and stir.
Add in seasonings.
Cover and cook on low for 6-8 hours or on high for 3-4 hours.
Remove the lid. Break the lasagna noodles into bite-size pieces and stir them in.
Cover and cook on high for 30 minutes until the noodles are cooked through.
Stir in chopped spinach and spoon into bowls.
Top with mozzarella and parmesan cheese, as desired.
