If you’re looking for something easy to add to your weekly prep, these might be it. The base is just three ingredients, and once you’ve got that down, you can turn it into a few different flavors so everyone in the house can grab their favorite. Chocolate chip, cinnamon sugar, or glazed. Honestly, I can’t pick just one, I love all three.

Pumpkin Spice Protein Mini Muffins

Ingredients:
- 1 box Betty Crocker Spice Cake Mix
- 1 Premier Protein Pumpkin Spice Protein Shake
- ⅔ cup Chobani Zero Sugar Vanilla Greek Yogurt (or your favorite Vanilla Greek Yogurt)

Directions:
- Preheat oven to 350°F and grease a mini muffin pan.
- Mix the spice cake mix, protein shake, and Greek yogurt until combined.
- Scoop into your mini muffin pan. You can also make these bigger, it just changes the amount you get at the end. I usually do one pan of mini (perfect snack size for the kids) and one pan of 6 bigger ones (a great grab and go breakfast option for Chris and I.)

- Bake for about 16–19 minutes, checking on the earlier side. They’re ready when a toothpick inserted into the center comes out clean.
- Let them cool before glazing.

3 Ways to Make Them
Once your base batter is ready, this is where the fun happens. Pick one, or make all three:
- Chocolate chip: Mix mini chocolate chips into the batter before baking.
- Cinnamon sugar: Sprinkle cinnamon sugar over the muffins before baking.
- Glazed: Let the muffins cool completely, then drizzle with the quick glaze below.

Quick glaze:
Start with about ½ cup powdered sugar and add milk 1 teaspoon at a time, stirring after each addition, until it’s the consistency you like. Drizzle over the cooled muffins.
